Seattle is playing catch-up to its neighbor, Portland, on the street food scene, but what the city lacks in quantity, it makes up for in quality. Seattle’s most talked about, and delicious, street options bring gourmet food outside of the confines of a fixed-location restaurant. One such upscale food cart, Skillet, has a rotating menu that includes Thai-cured confetti of duck with rice and mizuna salad, grass-fed beef burgers, and lavender shortbread. Skillet’s most infamous item on their menu is bacon jam, a chef-created condiment and secret that’s spread on the cart’s much-talked-about burgers.
