Eleven miles (18km) south of George Town, this is one of two Peace & Plenty properties in the Exumas -- and the posher of the two. Established in 1990, it caters almost exclusively to fishermen (and their companions) who seek an all-inclusive holiday with three meals a day provided. The two-story inn, surrounded by young palms, is built of concrete and stone, and lies on a peninsula enveloped by crystal-clear waters and sandy flats. This is The Bahamas' most elegant bonefishing inn; you can fish all day and come back to be pampered in luxury. The lobby is inviting, with tile floors and rattan pieces. From many of the midsize rooms opening onto the wraparound balcony, you'll have a great view of the turquoise waters, or perhaps you'd rather doze in a hammock. Accommodations are enlivened by bright floral spreads and prints, air-conditioning and ceiling fans, and spacious, immaculate bathrooms and tub/showers. You don't have to be an angler to stay here -- but it helps. If you don't fish, you may be left out of the nighttime conversation. The food served in the clubby dining room is excellent; it's made by a well-trained chef who not only knows how to grill steak to perfection but can whip up a mean vegetarian platter too. Of course, the finest way to dine here is on fish caught that day by the chef or one of the guests. After cleaning the fish, the kitchen staff toss scraps to the sharks in the adjoining waters. This is the chief evening entertainment, though there's an honor bar and a lobby lounge upstairs with a TV and VCR.
