The chefs at this sublime Michelin two-star restaurant know a thing or two about running a hotel as well, and giving your entire night to this intimate property is ineffably rewarding. Walk through the colonnaded front porch and you instantly feel like a distinguished member of the Pommery champagne dynasty, which built the château in a 17-acre park in the early 1900s.
Rooms reflect the style of the period in which the château was built; French doors, wrought-iron balconies, intricate moldings and swaths of colorful fabrics abound. Minimalists might wince at the prolific use of toile and chintz, but lovers of 18th-century opulence will feel right at home. Still, amid the grandeur, comfort is a top priority. Even the lowest-category room is generously proportioned at 500 square feet. Each has a dominant color scheme; if you’re not a fan of, say, red, let them know. While you’re at it, request a room with a view of the Reims Cathedral, which only some rooms have.
The staff--formally clad in navy or gray suits—are thoroughly professional; bags are whisked away upon arrival and registration is a breeze. Knowledgeable and well-connected receptionists can arrange tastings and tours of the top champagne houses, many of which are within easy walking distance.
The award-winning restaurant has flourished under the direction of the talented young chef Didier Elena, who prides himself on the “polarity” of his cuisine—dishes that rely on opposite tastes, textures and aromas to create memorable meals. Pair your meal with any of the 300 champagnes, including a 1982 Krug Clos Mesnil and a 1959 Dom Perignon Oenotheque. Or have your bubbly in the adjacent bar, done up in striking tartan fabrics. In summer, sit out on the terrace and enjoy the local drink in style, overlooking the leafy grounds, or play a game of tennis.
