This hotel in the verdant uplands above Dieppe Bay is situated among the ruins of a muscovado sugar factory on the northeast coast, with a good sandy beach just a short drive away. Isolated and rural in flavor, and dominated by the artfully gaunt masonry smokestack of the long-ago sugar cane distillery, this former plantation enjoys cool breezes from both ocean and mountains. Behind the 5 hectares (12 acres) of manicured lawns and gardens, the land segues into a rainforest and Mount Liamuiga. Accommodations lie either within the original core of either the main house or what used to be the distillery, or within pleasantly decorated outbuildings. There's no air-conditioning, but ceiling fans and cross-ventilation keep the place comfortable. Each unit, generous in size, is decorated in a Caribbean country-house style with antiques, stone or white walls, floral prints, local art, and rattan furnishings. Many bedrooms have mahogany four-posters.
