A premier waterfront hotel, the Sebel is in the historic Woolloomooloo Wharf complex and has been painstakingly renovated, leaving as much of the original early-20th-century Pier One structure intact as possible. It's a wonderfully intoxicating blend of old wooden beams and tasteful modern art. The only drawback to staying in one of the tastefully appointed waterfront rooms is that the harbor views -- through windows that run all the way to the polished wooden floorboards -- could make you want to stay in for the rest of the day. Or perhaps the cocktail bar, one of the trendiest in town, is more your scene.
