This Istiklal wine bar looks like any other storefront cafe, but just a few steps down to the cellar -- where those in-the-know head -- is a late-19th-century underground aqueduct that is said to run from the British Embassy all the way to Tophane. The wine bar stocks more than 100 labels, including some of the better Turkish vintages. Try the Sarafin Cabernet, or the Karma Cabernet/Özküküzü blend. Open daily from 11am to 2am.
