The apex of the Aspen dining scene, Piñons has been one of Colorado's best restaurants since it opened its doors in 1988. The room, heavy on suede and lodgepole pine, is casually elegant, with picture windows providing the ideal lens to gaze at Aspen Mountain over a truly splendid splurge of a meal. With starters as delectable as this -- lobster strudel, anyone? -- it's hard to make it to the entrees, but they are works of inventive culinary art, letting the fresh flavors shine in simple but timeless preparations. You can't miss with herb-crusted ruby trout with spinach, crab, pancetta, and sweet corn puree; or pistachio-crusted rack of lamb with potato-rutabaga hash. The desserts include an unforgettable raspberry crème brûlée and homemade ice cream.
