If you eat one meal out in Los Cabos, do it at Nick San. No matter your fancy -- raw, cooked, veggies, meats, traditional, or out there -- this dining experience is so superb it may shift your world view. Owned by Masayuki Niikura, Angel Carbajal, and his sister, Carmen Carbajal, who started their sushi dynasty 12 years ago at the original Nick San in downtown Cabo San Lucas, the newer and swankier outpost at Las Tiendas de Palmilla ensures a taste of Teppanyaki nirvana on both ends of the Corridor. The fire of Mexico meets traditional Japanese ingredients in such delicacies as tuna tostada, locally caught sea bass sashimi, and lobster with curried cream sauce. The low-lit atmosphere suits an intimate occasion or a night out with friends, and the meticulous service is always warm and personal. Because the entire menu is too delectable to pick one thing, let someone else make the decision for you: Ask for the chef's tasting plate and, whatever you do, do not miss the lobster tempura roll or the crab-stuffed salmon yuzu. Just be sure to let your server know when you've had enough, or the plates will keep on coming. By the time the check rolls around, you'll be so enamored it won't even faze you.
