Reservations are vital at this culinary favorite of the elite and influential. Opened in 1927, it's named for the stock exchange that operated near the original when both were located by the Golden Horn. Now it shares space with the convention center and sits protected behind military guard. Borsa features the best of Anatolian cuisine, from the peasant plaki (slow-cooked beans) to the more celebratory lamb sis prepared over an open fire.
