Daniel Boulud of Café Boulud and Daniel fame opened db Bistro Moderne as a casual alternative to his other restaurants. Casual, in this case, means you get architect Jeffrey Beers to put a hip spin on the contemporary French bistro; the result immediately attracts a fashion-conscious crowd (meaning you can wear a T-shirt here -- but make sure it's Armani). To round out the "casual" experience, add a hamburger. But this is not your typical $5.95 burger deluxe; no, Boulud's creation comes in at $32 and is made with minced sirloin, foie gras, preserved black truffle, and braised short ribs, served on a Parmesan onion roll. If any hamburger is worth that much -- and this point is debatable -- this one is. Despite the silly burger excess, the food is, like all Boulud's ventures, outstanding -- especially bistro favorites bouillabaisse, coq au vin, and frogs' legs.
